Chef Mally took guests on an extraordinary gastronomic journey at Kardamom & Koffee in Kololo over the weekend, crafting an unforgettable three-course dining experience.
The night began with Chef Mally stepping out of the kitchen to introduce his thoughtfully curated menu. He described it as ‘a dinner with deeper roots’ to his Guyanese heritage. His dishes played with spices, sauces, and a unique mix of flavours, all carefully designed to surprise and delight senses.
The culinary adventure started with a refreshing cucumber salad drizzled with mango-thyme dressing, perfectly balancing crispness and zest. This was followed by a comforting burnt corn soup, rich and velvety, setting the stage for the indulgent main course.
For the mains, guests were treated to Pepper Pot, a dish brimming with warmth and complexity. They could choose between oxtail and pork, or a roasted vegetable alternative, both served alongside green seasoning rice that soaked up the bold, aromatic flavours.
Every bite was a revelation, showcasing Chef Mally’s mastery of blending Caribbean traditions with a modern twist.
The grand finale was a soursop maca root soufflé, an elegant, yet deeply comforting dessert. Paired with The Singleton Love Spritz, the dessert offered a perfectly harmonized balance of sweetness and sophistication.
Adding to the enchanting atmosphere, the incredibly talented Biya Folks took guests on a soft, live acoustic journey with her soulful vocals and guitar melodies. Her performances were a mix of classic favourites, nostalgic throwbacks, and heartfelt renditions like Skanking Sweet by Chronixx, Goodlyf’s Zuena, Azawi’s Masavu, Winnie Nwagi’s Everything, Sunday by Toniks, Mirror by Lil Wayne and Life for Rent by Dido among others.
As the evening drew to a close, Chef Mally stepped out of the kitchen once more, this time to personally thank his guests. He took a moment to soak in the compliments and feedback, listening as diners expressed their appreciation for the unforgettable modern Caribbean experience he had delivered.
This was the second edition of the Chef’s Table experience sponsored by The Singleton, and it further cemented the single malt whisky as a brand synonymous with fine dining and culinary artistry.
